FROM THE KITCHEN OF ANE MLJECKA: Chicken Stew “Tingulet”

chicken-stew-081015“Tingulet” is just another name for a good old traditional Chicken Stew in Dalmatia. The traditional recipe requires a home grown chicken, but any other chicken is still all right. Since the chicken is home grown it usually takes longer time for it to cook, so patience is required.

In the end you will have a very tasty chicken stew typically served with gnocchi, potatoes, pasta, rice or polenta.
Leaving the stew for one day to sit will allow all the sauce to soak in.This recipe requires white wine. I prefer “Miraz Graševina", imported by Wine World Wide Inc. CHICKEN STEW ‘’TINGULET’’

INGREDIENTS:

2 Pounds of chicken

2 Onions

1 Garlic clove

1 Cup celery

1 Cup parsley

1 Cup carrots

salt and pepper

1 tsp. red pepper

4 Fresh tomatoes

1 tbsp. tomato paste

½ Cup olive oil

Bay leaves and rosemary

2 glasses of white wine

 

PREPARATION:

Wash the chicken and cut it in small pieces. Sauté in olive oil and when the meat gets a nice golden brown color, add the chopped onion, garlic, celery, parsley, salt pepper, bay leaves and rosemary. Let simmer for 5 minutes. Then add the chopped tomatoes, and when it becomes tender add tomatoe paste. While it is cooking add small amounts of water and stir well. When the meat softens, add wine and let it cook.

Serve with gnocchi, mash potatoes, pasta, rice or polenta. With homemade bread, salad and a glass of chilled white wine (left over from Miraz Graševina) it will make a perfect summer meal.
